The Art of Maintaining Nature’s Fauna
Wisconsin has long been known as a sportsman’s paradise, rich with game that’s more flavorful and lower in fat than domestically raised animals…reasons why France treasures its lapin (rabbit) and Tuscan cuisine would not be the same without wild boar.
Executive Chef Sean Fogarty’s menu highlights sustainably raised game in both classic and nouveau dishes that help us learn and better understand our region’s needs to maintain a vibrant wilderness.
The dinner will feature four wine pairings highlighting sustainable practices and the science of wine-making.
